2027 Food & Beverage Percentage Application

Florida State Fair: Thursday, February 4 - Monday, February 15, 2027

Thank you for interest in the Florida State Fair Food and Beverage Program.

Deposit and Fees: The footage deposit and additional operational costs, will be outlined in your contract. The footage deposit is calculated at $125 per front foot and acts as your minimum percentage deposit. Once you exceed the footage deposit through sales, you will pay 18% of gross sales. Garbage is charged at a flat rate of $200 and electrical services are charged at prevailing rates.

Clover POS – Required
All vendors will operate as a Clover-only point of sale in 2027. Using a single POS system allows for consistent reporting and the cleanest, most accurate data possible, helping us continue to improve efficiency and make informed decisions across the Fair. Clover will be on-site to assist with rentals, setup, and ongoing support throughout the Fair.

Focus on Value: In 2027, we will place an increased emphasis on value for our guests. We are asking for your partnership in this effort by offering a range of options that appeal to different budgets while maintaining the quality and creativity that makes the Fair special.

Presentation Standards: The Florida State Fair is committed to providing guests with a high-quality food and beverage experience. In addition to menu offerings, applications are evaluated on presentation, professionalism, guest appeal, operational readiness, and overall fit within the Fair.

Professionally constructed food trailers, concession units, and permanent-style operations are strongly preferred. Tent-based operations are reviewed on a limited, case-by-case basis.

Operations consisting primarily of tents, cooking equipment, coolers, folding tables, or other temporary service elements generally do not meet the Fair's presentation standards.

Concessionaires are expected to maintain a clean, professional, and guest-ready operation throughout the Fair, including:

  • Professional signage and branding
  • Clean, organized service areas
  • Adequate lighting for nighttime operation
  • Well-maintained equipment and structures
  • Concealed storage and supplies whenever practical
